This certificated course gives a broad overview of the red meat industry from the farming of top quality livestock through the supply chain to your kitchen door, focusing on each element in the chain and how they contribute to the quality of the meat you purchase.

Containing classroom theory covering elements such as specifications & purchasing  and practical butchery and cooking demonstrations from a Master Butcher and top Development Chef, the course offers a good depth of information to enable either the seasoned professional chef to renew their understanding of the meat industry or for new staff coming into the industry.

Aspects of beef pork or lamb cuts will be taught and how to identify quality meat.

Course Fee: £150 per/person.
Maximum of 15 delegates per course.

Advanced Meat Appreciation Course - 2 Days

A complete certificated course taking delegates right through the supply chain from a visit to a farm through the supply chain to the consumer’s fork.

The course includes the latest technical data and theory on meat hanging and maturation to ensure that your customers get the very best eating quality over and over again.

It will also offer information on husbandry, animal welfare, feeding and animal breeds along with the best practice in meat handling, practical butchery and cooking demonstrations from a Master Butcher and top Development Chef.

The two day course will include an on site trip to the farm and processing unit.

Course Fee: £250 per/person
